How to make soft and fluffy biscuits
If soft and fluffy biscuits are what you are aiming for then here are two tips that could make a huge difference.
- Blend the liquid with the dry ingredients until the dough looks like cottage cheese. This works because it prevents too much gluten being activated in the flour which ends up with a tougher biscuit.
- Use cold butter, as cold as possible. By cutting the butter into small pieces and then refridgerating them again until you mix them into the dough it can make a huge difference.
How to make crunchy and strong biscuits
If you are looking for a strong crunchy biscuit, perfect for a biscuit base of a dessert or perhaps to dunk in a lovely cuppa then these are the tips you need.
- Use your finger tips not your palms to mix the dough. the warmth of your palms will make the butter melt and this makes the biscuits less firm and crumbly.
- When the dough is mixed chill it before baking. This allows the flour to fully hydrate which helps to make the biscuit firmer.
- Ensure you leave them in the oven for the full bake time. Underdone cookies tend to be mroe gooey so put them in the oven for an extra couple of minutes for hard firm cookies. Watch them carefully though so they do not get too brown. Usually just an extra 2 or 3 minutes from the soft cookie stage is enough.
